Ethiopian Harrar 4 BIFTU GENEMA is a dry-processed coffee.
Dry, or Natural Processed is the method where the ripe red coffee
cherry (with bean, actually the seed, inside) is picked from the tree
and laid in the sun to dry. When dry, the outer mucilage and
parchment shell can be torn from the green seed in one step and then
sorted. This process is virtually all done hand and eye in countless
hours of work. It's a non-mechanized, human-sorting system.
Grading:
The highest quality coffees from Eastern parts of Ethiopia will have
grades of 4 or 5 by nature of the preparation method. Their system is
a bit tricky. Often, a Grade 4 will be marked grade 5 to save on
taxes and duties, and because you can now have a Grade 1 or 2 natural
from Yirga Cheffe, but not from Harrar, where the top grade will be
Grade 4.
Biftu Genema is the cooperative's name, which means, "sun rise."
There are 10 women and 61 male members.
The Biftu Genema Lot was part of the new direct trade auction (DST) in
Ethiopia this year. DST refers to the Direct Specialty Trade Auction,
a way for smaller lots of high quality to bypass the Coffee Exchange
(ECX).
The average growing altitude of this lot is 1,800 meters. Resulting
in a wild complexity of cup flavors of silky smooth, fruited chocolate
spice, fresh earth and humus with a thick body.
